It's just what I've seen from shooting a lot of events and some weddings over the years with too many cameras to even list (10D, 20D, 1DMKiiN, 5D, 1DsMKII, 1DMKIII, D2Xs, D3, D300). And other photographers have noticed this as well (there were discussion at The Digital Wedding Forum). It's subtle to some, obvious to others, etc. Skintones are hard to get right - especially with digital. For me, it was always less post work in ACR/Lightroom to get Canon skintones to look right, where with Nikon NEFs it was more work. Check out this post from Jeff Ascough on photo.net:
