Ended up buying an M Sport with wood. My personal opinion only: it looks both sporty and rich.

Agreed. There are plenty of "sports cars" historically with wood trim. Hell, my 2003 Honda Accord had aluminum trim and there wasn't much sporty about it other than the manual transmission. I'm totally in sync with you that the burl walnut elevates the car to a level of both luxury and sport.
