Lag is caused by the turbo (diesel is, actually, a turbo-diesel engine). When at low rpm and suddenly floor it, it may take a short moment before the turbo will spool up and create enough boost (1750rpm+ for the 320d) for the engine, therefor the 'turbo lag'.
