As for the tyres being taller, do you mean the profile is bigger? IE the /xxR figure? (eg /45R or /50R)

The offset is the distance of the vertical centerline to the mounting flange. ET comes from the German term "einpresstiefe" or freely translated "impressed depth". A smaller measurement (in mm) results in a wider track. So on a staggered setup, the wider rear rim typically has a greater ET to keep the outside of the rim more a less in line with the front.
