Actually there's an option in te menu system to choose exactly what sport mode gives you. I suspect most have it set to chassis only or chassis + steering. This gives the behaviour described - ie switching to sport mode doesn't change the transmission. Then flicking the gear lever left gives you sport transmission.
Btw floppies are better to make sure the car doesn't second guess you wrong on windy roads. Also allows you to get to 8th if in sport transmission...
