For leather I've been using Griots Leather Care. Cleans and conditions in one step and doesn't leave a greasy residue. I've found Lexol to be too smelly and too much residue.
For dash/vinyl/plastics I recommend 303 Aerosoace Protectant. High UV protection, long lasting, and gives a nice matte finish. No gross shiny residue and has no strong smell either.
