Well, in thinking about it, I could sort of see how it might apply to most peppers (I don't know too many peppers though), but logically, you take say a red bell pepper - very smooth, no lines, and sure enough, it has no heat at all.

On the other hand, a scotch bonnet pepper has many lines and is crinkly and has lots of heat.

Jalapenos are somewhere in between, I don't notice many lines in the ones available at my grocery store, but there are some.

Interesting, I might have learned something useful today.

I think there may be some truth to your musings. If the skin is perfect, they are a bit younger, have had less time to build up the heat (of frustration)? Less vim and vigor, as it were.

Yet those with fine "laugh" lines and crows feet have lived longer, built up that tension, stored away the heat of battle.
