Will these tires work?

Will be picking up some vorsteiner vss101s in 19x8.5 et30 and 19x10 et45. Trying to decide between Michelin ps4s tires in either 225/40/19 and 255/35/19 OR 245/35/19 and 275/30/19s.

The 245/35 and 275/30s seem more popular here. So 2 questions....

1) Will 255/35/19 be too much of a stretch on a 10" wide rear tire?

2) Will I have rubbing issues since I will be lowering on coils if I go 245/35 and 275/30?
