Anything that has to be coded will probably be reset to the defaults.

umm question - how are you updating the firmware? Do you mean the Bluetooth firmware available on bmw's website? If that is what you are talking about, then no - that doesn't delete your coding. The only thing that would delete the coding you did to enable video in motion would be to overwrite the cic or nbt cafd file. And the BMW logo is in the Kombi cafd I think - so if you take it to the dealer, and they code your car or update the ECU - then you will lose your coding for sure...

Thats a yes. E.g.: If you are installing some additional features like surround view and this was not originally part of the VO and is only basically coded, after a software update also this is gone and has to be coded new.
Hence BMW reads the origin VO from the system and all additional installed features are not part of the VO, the installed file would overwrite your settings. Even if you are enabling the technical add ons into the VO, they're gone. So encountered in Germany.
Nevertheless: All e-sys codings above the VO are gone after a SW update and you couldnt avoid that.

If you're talking about the USB update on the website, it will reset all of the coding you have on the head unit module only. All other custom coding will stay.
