It doesn't get boring, trust me lol. And if you keep it under 2.5k RPM it's not obnoxious, but it's also no secret you're driving a hot bimmer.

Yep, exactly this. The burbles are decently loud even in low rpms but not super obnoxious until you let off around 5-6k.

Assuming you trick the car with the O2 sensor spacer to avoid CEL.
Is there any reason to believe that the car will have throttle closure issues with a catless DP and stock tuning?

It won't. I occasionally drive my catless dp on stock tune and it's smooth as always, just more responsive.
