I have no firm knowledge, but was just watching the same process on my car a couple of weeks ago. I decided that "production started" included all the gathering and sorting of all the parts that were needed during the entire assembly process. Delays might mean some parts are temporarily unavailable.
BTW, mine was in the same status for 6 days before it moved to "Body shop". 2 or 3 days later, it was done.
