Thread bump.
Fast forward about 2.5 years and 27 real world track days later and I'm finally running a triple screen setup with some better hardware.
Here's a video of the displays in action. Keep in mind that the camera is recording higher than the correct field of view so the perspective is a bit off.

These days I'm mainly playing GT6 with the setup. I've tried F1 2013 and Assetto Corsa with my PC, but I'm waiting for a game like Project Cars (I really hope this game delivers in realism) before I truly dedicate a PC to this setup. I'd love to give Forza 5 a shot (was never a fan of the previous Forza's with a wheel setup), but I'll have to wait until a quality supported wheel is available.
