OK. There is actually a guy on the BITOG oil forum that swears that's how he determines the condition of his oil. Don't think he uses a sommelier's tastevin; just takes a drip off the dipstick. There is another guy who has a more scientific method: He heats a metal plate on his barby grill and then sprinkles a bit of the used oil on the plate and examines the residue, much like the old tribal shamans casting the bones and sprinkling with chicken blood to devine the portents.
