New kitchen knife arrived today

And fuck me is it sharp!

It's made by one of Japan's best current knife sharpeners Takayuki Shibata, hand forged using Super Blue steel and I've never used anything like it.

The knife comes wrapped in a piece of newspaper from the day it was made.

Also bought an oak knife rack to keep it and our other knives on.

Anyone else got any nice knives?

Ooooooh shiny I have an in expensive mora hunting knife which I cut myself on because, well, shit, it's sharp and I'm incompetent with sharp stuff.

Reminds me I always wanted a Kyocera ceramic knife .....

I'm pretty good with sharp stuff, very rarely cut myself but this knife really is one step above the usual stuff. I've never been able to cut garlic as finely as this, it's incredible.

Not sure I'd trust a ceramic knife tbh, read a lot of stories about fragments chipping off them while they are used - they've got to end up in your food!

My brother has two of the Kyocera ceramic ones and they're insanely sharp! Cutting some things that used to need holding down with one hand, can just be neatly sliced through! They are so sharp they seem to cut further into the cutting board and get stuck... that's how he managed to break the end of one of these!

I've got a set of Robert Welch signature blades.

Beautiful knife set imo. Can pick them up in John Lewis etc. Moderately expensive without being break the back, with some of the most comfortable handles I've ever used.
They come with and hold a great edge. My only concern in our house is stopping the wife or any visitors using them and bloody chopping things directly onto a plate use the chopping block dam you....

With some of the really hard Japanese steel, you have to be very careful with the edge as if you lose it, it can be very difficult to get back without a professional level of skill with a sharpener.

A good knife makes cooking so much easier! I have a good collection of Global knives that were a Christmas present a few years back.

He makes some lovely knives but I couldn’t justify those prices. I’ll have to continue with my trusty Global knives.

It's pretty awesome, knew about magnetic racks for ages but the neat unfussy oak one really sold it to me (plus as above, it won't damage the blades)
