New kitchen knife arrived today

Beautiful knife set imo. Can pick them up in John Lewis etc. Moderately expensive without being break the back, with some of the most comfortable handles I've ever used.
They come with and hold a great edge. My only concern in our house is stopping the wife or any visitors using them and bloody chopping things directly onto a plate

With some of the really hard Japanese steel, you have to be very careful with the edge as if you lose it, it can be very difficult to get back without a professional level of skill with a sharpener.

You'll see on the rack there's a Robert Welch one, there's another one in the drawer, but it's not a patch on this new one (and the RW one on the rack is practically brand new as a warranty replacement for the original). This new one should keep its edge for a decent while and shouldn't be too difficult to hone or re-sharpen should it need it.

The RW knives are actually the wife's, the Zwilling knives are mine and IMO better than the RW ones (but not as comfy to use).

blunt/damage. If you put a brittle Japanese blade on there, the snap can be quite something when the magnets are strong, could chip the blade on impact. When you remove it, you'd have to be extremely careful not to move it up or down and remove it by tilting it towards the top of the blade, all faff I can't be arsed with!

Oh is the fancy knife made of S30V steel?

I don't have any knives made of that so i'll be fine.

May be a stupid question but if that oak rack isnt magnetic how do the knives stick to it?

I believe there is a magnet behind a thin veneer of Oak.

Would be a fun project to make one of these

It's a solid lump of oak with the top 1-2mm sawn off it, magnets put inside and then the top glued back on. It's a perfect finish and *very* nearly seamless. Took the wife and I a few minutes to work out how it was done!

I haven't gotten a proper kitchen knife yet but I have been collecting pocket folding knives, hunting knives and general camping knives for about 10 years now.

A Super Blue Steeled kitchen knife is certainly on the cards, those Japs sure know how to make a proper knife!

I've nothing as nice as some of them on show in this thread, I have a set of Porsche Design knives, there are 14 years old now - they were a present to myself when BT made me redundent

Still great with routine sharepening after all these years.

Not a kitchen knife, but a bushcraft knife, been after this for a while and picked it up yesterday from the maker himself. Bit of a collector's item too. The maker did this as a collaboration with Mike (from MCQBushcraft - does great YouTube videos).

Not quite a kitchen knife, but I made a cake knife for my wedding. Not effective at cutting much aside from cake, but it was a fun project.

Those are my two custom kitchen knives. Looks and works amazing, haven't even stropped or sharpened them since I got them half a year ago.
