Log review - Lag when data logging/mashing accellerator pedal MHD 2+ E20

Appreciate anyone who can chime in here.

I've noticed a lag when datalogging in manual mode. I hold the rpm around 2500 then punch it, and there's like a 1 second lag. Looking at my logs its clear the DME is pulling the load target back midway through the throttle opening when I'm mashing the pedal. There's a clear spike and dip in in rpm as a result.

The only thing I can notice is the rich AFR vs target, then the dip. Do I just need more E85? I was running a calculated E25 mix.

PI is currently set to 0 pwm in all maps (PI is off waiting to be tuned).
