I wouldn't even consider ordering a car like that with Sensatec. It makes sense in a convertible so you don't feel as bad leaving it parked with the top down but beyond that leather all the way. There are ceramic coatings for leather that you can have applied if you're worried about it.

Isn’t Sensatec just vinyl? I don’t care how “far it’s come” I wouldn't want plastic seats in my X7!

But by the time they finish the coatings on the Dakota/Vernasca, they are essentially plastic as well,

Had Nappa in my 2019 M550i, and have Sensatec in my 2022 540i. I love the new Sensatec; the perforations + "quilting" really make it an attractive looking seat. Material is also very soft and comfortable.

I definitely would not want Dakota on my car and glad it was not optioned with it.

I have no experience with Vernasca so I can't speak on it.

The smart money is on Sensatec.
Cars and SUVs are (eventually) disposable consumer products and X7s are no exception.

Disagreed. Regardless of the “coatings” the leather adapts to your body temperature in a way leatherette absolutely does not and cannot. That’s why for ten years in Chicago winters it didn’t bother me that my 3er didn’t have heated seats.

Definitely get leather, I have one of these coatings on my convertible’s ivory interior and it has worked well for me.
