E-Sys Version

My car will be going in for its first service soon. I have made some changes to it (stop/start disabled, LED bulbs and fogs).

If they update the software at the dealer and overwrite my changes can I use my existing E-Sys 3.27.1 to re-code or should I use the latest version?

You can continue use your existing version of E-Sys.
But you will need the latest psdzdata if the dealer will update your car.

No reason to update to 3.30.1 unless you are using Pro Launcher or are programming. E-sys 3.27.1 still works the best.

So if they do update and I have to re code my changes I should only need to replace psdzdata with the latest version before connecting to the car?

You update out of necessity. Computer PSdZ just must be > vehicle I-Step.
