Yes you can comeback to stock.
Is like a phone hacking. You need to unlock bootloader to flash a rom or kernel.
and you can always return to stock and lock it back.

You can flash back to stock and re-lock the DME so upon first inspection the dealer will be none the wiser. However, if they do enough digging in the car's computers, they will see it was tuned.
