The only reason I would upgrade to a newer phone at this point is for the camera. I have the X, the iPhone 12 has an awesome camera, especially in low light and the video is great. I do content creation for a company and photography for a detailer, not having to use my DSLR for some shots would make my life so much easier. I've held out long enough on my upgrade and was already considering making the jump to the 12 just for the camera anyway.

You kind of have to weigh what the new phone can do for you and judge if it's worth it or not.

Probably worth doing. The camera on my 11 pro max is way better than my wife's X, and I know the 12 moves things on again.

My Galaxy S8 does that & its an old phone! but none are as slick as my old Motorola Razr V3

I get a company paid phone so can't comment on what to spend but for my eldest daughter, she got a Samsung A21s (< £180 new) and ID mobile £6 pcm on a monthly contract. She gets 4GB per month on that (and unlimited texts and calls) and unused data rolls over. Most of the time she is on wifi so 4GB is plenty.
She is more than happy with the phone.

The Razr V3 was great! Best predictive text (at the time) imo. Worked fine until I put it through a wash cycle by accident

That's how I do it too. Just got a Moto G50 which will be less than £5 per month over 3 years and it is 5G and Android 11 so Android Auto works in the car. As a phone it seems absolutely fine for me. Add in a £6 per month Sky SIM and I'm all set.

Same, buy outright and trade in every 2 years so normally get a few hundred back. I got an s20 plus last year and annoyingly smashed it on Friday as it goes. Have a replacement coming next week on insurance so looked into trading it in as will get 400 for it but the s21 is just not worth the upgrade at all. In fact a lot of reviews say the s20 is still better bar a bit faster processor and few bits. The s21 doesn't have a micro sd slot or come with a charger!

I think this year's models from Apple and Samsung have been hit by everything that's happened and they are both just living off reputation. Maybe next year they will have something new but really what else is there? Photos are already amazing quality, they are already fast etc.

I have realised how much of a royal pai changing phones is though, I use it for 2 factor authentication, banking, email, work, radio and lots else and not having it is a mare!
