I currently have the stock tire set up on my 2018 F36 GC (225-45-18 front and 255-40-18 rear) on Apex SM-10 wheels. Will a square set up of 245-40-18's work on my car and current wheels?

Yes, depending on what size your SM-10s are.

I run the 245/40-18s square set-up on my 435iX for winter, on 18x8 et29 wheels.

I don't remember exactly how wide my SM-10's are, but I do know that rears are 1/2 inch wider. But I can't imagine my wheels are any narrower than 18x8.
