I recently did mine.

If you're going to retrim it then using a 4-way stretch fake suede.. most of my interior is 9040 Alcantara so I had no choice, the problem is Alcantara doesn't stretch and whilst you can conform it around corners the stress marks will wrinkle up and show somewhere, in fact if you did manage to glue it down perfectly stretched you'll loose the nap of the fabric and it'll just look like a scotchbrite pad ha.

Reason I mentioned stretching is because there's a large area around the front that needs a lot of work, the recess for the visors, the front middle hump for lighting controls etc. I managed to sort of make it work but there's 3 wrinkles hidden under the visors that my OCD isn't happy about. I spent just short of £400 on enough Alcantara to do it so I'm living with it for now lol, but ideally it needs release seams sewing in.

Removing it very simple if you're DIY focused, there's just a lot of things in the way. On mine I had to release the rear doorcards to undo the B pillar trims, then the parcel shelf side triangles needed removing to reveal hidden screws, things like the visors/coat hooks etc need time to be removed too.

I ended up having to fold mine a little which lost some rigidity in the fiberglass backing, I nearly had it out but unfortunately the rear area has curved steel backing plates which were getting jammed. Same for getting it back in, luckily no creases or fold lines showed as it all sprung back into place.

I think kies sort of shows the process in his video where he removes and replaces the roof on an f30 to a carbon one. Should give you an idea of what the job may require.
