What do the dealer do that we can't do?

Im curious to what the dealer do to our cars to ressurect them if we accidentaly hit the "code default value" button for example?

And how can the dealer sometimes seem to be able to remove errors from car memory we seem to be unable to remove ourselves?

They would flash the affected modules to see if that will resolve the issue. In some cases, it will not work and the module will need to be replaced.

We can actually clear error codes with Tool 32. When I accidentally FDL coded my KOMBI with the wrong FA, I had a slew of error messages come up including the CEL light and I was able to revert everything back and clear the faults.
