Something I haven't seen brought up are laws concerning consent to being monitored.
Not sure how the laws in Australia work, but most US states have laws stating a person must consent to being monitored/recorded and you can't do it without their knowledge. This drives those little disclaimers when you call a customer service line warning you the call may be recorded. Unplugging the camera is their way of showing they don't want to be recorded while working in their own place of business.

If you suspect that you need to have the dashcam on... you need to look for another shop.
I do not trust dealers, I do not trust most mechanics. I know that it is very easy to screw up and then replace part then charge the customer. Or troubleshooting by charging customers parts until you find the issue. I found myself a shop that I trust (when I don't feel like wrenching), they are honest and admit mistakes. They align with the way I work on my car and care. No need for dashcam.
